The rich nose plunges us into subtly complex dried citrus skins that make our mouths water. The fine, lively bubbles sparkle and flash with a light, airy, pure mousse. The palate is racy, crisp and salivating, iodized and salty, but neither fruity nor autolytic. Flavors tend more towards bright, sharp metals, with a hint of almond. The finish of this very fine brut nature is intense, direct and fresh.

Now run by Benoît and Mélanie Tarlant, the Œuilly estate boasts some 14 hectares of vines, divided into numerous parcels. In terms of cultivation, horse-drawn ploughing, now practiced on all the emblematic plots, has gained further ground. From 100% pinot meunier from a single plot, to an equal blend of pinot noir and meunier with chardonnay, and even cuvées based on arbane and petit meslier, the range of wines on offer here is particularly diverse. Attention to soil, cultivation and cellar work naturally results in a very high level of quality. The estate has been certified organic since 2019. The "Zéro" cuvée has made a major contribution to the estate's recognition, as well as to the resurgence of bruts nature.
