Founded in 1998 by his parents in the Bay of Mont Saint-Michel, between Cancale and Le Mont, Julien took over this oyster farm in half-farming mode with Sandrine Delile, his partner. Half-farming, because they grow spat from the age of 18 months and raise them until they are 3 years old. Together, they produce fine oysters in sizes 1 to 4 and special oysters with the "La Rose du Mont" label, raised in Australian baskets stirred by the winds and currents of the English Channel to give them a fuller, tastier texture. By reservation, the oyster farmers offer tastings directly at their Le Vivier-sur-Mer site, as well as at local markets and, on request, carefully prepared platters. Delaunay oysters are available every morning, Monday to Friday, at the production site in Le Vivier-sur-Mer, at local markets (dates and locations communicated on their social networks), at Les Fermiers de la Baie in Saint-Malo, and at several fishmongers and restaurateurs in the region.
