Pastry Kunihisa Goto, head chef at the restaurant L’Axel in Fontainebleau, has always been passionate about cakes. After opening his first location in Fontainebleau, he replicated the concept by adding a tea room in this artists’ village. While some creations follow in the tradition of French pastry classics (strawberry tart, red fruit tart, tiramisu éclair), others are delicious nods to the fusion of French and Japanese flavors, such as Haru Matcha (matcha sponge cake, strawberry confit, vanilla whipped cream, and strawberry compote) or Ko Matcha (matcha green tea sponge cake, strawberry compote and azuki beans, fresh strawberries, and vanilla whipped cream).
