Remarkable Restaurant
Today’s young chefs, like many of their predecessors, know just how much the region’s culinary scene owes to Alain Llorca, a chef steeped in the culture of Nice and Provence, who began making his mark at the Negresco after succeeding Jacques Maximin. Today, his restaurant is as much a bastion of regional haute cuisine as it is a vibrant and colorful haven in the Nice hinterland. Here, guests enjoy delicious dinners in a warm and comfortable setting, with the constant assurance of a rare experience in such capable hands. The chef combines virtuosity with cultural insight, offering in his “Collection” dishes that pay homage to tradition while innovating: ajo blanco featuring seasonal peaches flambéed and dried watermelon; lobster ravioli with shellfish broth; beef tenderloin with cherries and foie gras; warm dark chocolate tart with hazelnut praline and citrus sorbet—all part of an excellent four-course menu for €150. The wine cellar is curated by a connoisseur, with a particularly strong selection from the region’s finest estates, as well as from the Rhône and Burgundy.
