The opening of Aldéhyde was one of the smaller highlights of the fall 2024 season. In this charming, contemporary setting dominated by raw wood, the chef and his small team are busy in the kitchen, which opens widely onto the dining room, giving guests plenty of opportunity to watch the cooking—which, as is all too often the case, operates on two levels: simpler and more affordable at lunch, more ambitious in the evening. The plates feature lovely creative touches, such as the lemon-infused zucchini carpaccio, the beautifully steamed cod fillet, carrots, and turmeric-infused beurre blanc, as well as the melon tart with minty almond sorbet—all of which are worthy of two “toques,” an accolade that also recognizes a highly professional front-of-house team.
