Jeannett Rosales Galán runs one of the best Mexican restaurants in the capital, avoiding both pastiche and the easy route, as well as drastic reinterpretations. The chef, originally from Guadalajara, offers authentic Mexican cuisine—contemporary yet true to its roots—featuring both classics and more personal creations. Among the many options are a reimagined guacamole, trout al pastor, barbacoa, spiced crème renversée, panela cream, cajeta caramel, popcorn, and crumble.
