Apicius, Paris: an oasis of luxury and discretion in the heart of the ultra-chic 8th arrondissement, just a stone’s throw from the Champs-Élysées. You enter through a discreet, almost hidden door on Rue d’Artois, follow the small paved path that winds through the private park, and then discover the magnificent shaded terrace (which never fails to impress first-time visitors) or, when the weather isn’t cooperating, we settle into one of the elegant salons of this private mansion with its irresistible charm. It is here that Laurent de Gourcuff and his chef, Mathieu Pacaud, have chosen to pay homage to classic gastronomy and top-quality ingredients, always perfectly prepared and respected: a superb dish featuring green asparagus, lovage, and a sabayon made with aged Comté cheese, enlivened by puffed buckwheat seeds; a magnificent sea bass served with a mousseline of carrots and orange and spinach in brown butter, followed by a comforting dish of golden veal sweetbreads with four-spice seasoning; white asparagus, and a whiskey-infused sabayon—each dish meticulously crafted down to the smallest detail, plated with precision, and cooked to perfection. The service is always just the right balance, treating tourists who’ve come to indulge in a slice of the Parisian dream with the same courtesy as business diners who’ve made Apicius their go-to spot, and the wine cellar caters to (almost) every budget while prioritizing fine labels.
