Le Trou Gascon is finding its footing… it’s not easy to follow in Alain Dutournier’s footsteps. Chef Sarah Chougnet-Strudel, who had revived this restaurant in late 2024, has left. After several unsuccessful replacements, Vincent Quinton is now taking over the kitchen. He offers a slightly more modern take on the dinner menu. At lunch, the chef offers a fairly concise €30 set menu: the perfect egg, satsumaimo mousseline; duck confit with Sarladaise potatoes, followed by roasted figs and vine peach sorbet. To accompany this bistro-style cuisine, the wine list features a selection of biodynamic wines.
