In the heart of the Aure valley, the Relais des Aryelets is an adorable alpine-style inn, with wood, views of the Pyrenees and Frédérique's warm welcome. In the kitchen, Julien pays homage to his valley with a fine understanding of the product, showcasing a lively regional culture. On the €44 seasonal menu, a cappuccino of Tarbais beans simmered with black pork lard, espuma tarbais/coffee, butter croutons and meat jus, Pyrenean trout salted like cod and cooked on the skin, first asparagus, passion fruit, salicornes and tagetes, pork from Noir de Bigorre cooked at low temperature and caramelized a la plancha, reduced jus, potimarron and haddock, a dessert of cookie madeleine, lemon syrup, lemon confit and ganache montée, crispy tuile and sesame ice cream.
