At this historic Sologne inn, recently taken over by Corentin Poyau, the family tradition continues with skillful consistency. Trained notably under Christophe Hay, the young chef preserves the restaurant’s rustic essence while infusing it with a few contemporary touches. Here, there’s no pretension: the cuisine remains straightforward, focused on the ingredients, with lightly plated dishes that get right to the point. The wild boar ham, served with a variety of beet preparations, charms with its simplicity and tenderness, while the sturgeon à la meunière, accompanied by carrots, feels somewhat conventional in its presentation. The dessert, centered around a honey Bavarian cream, is particularly well-executed, striking a balance between lightness and indulgence. The dining room, true to the inn’s spirit, blends rustic charm with more modern touches, supported by a professional and dedicated team. The service, well-executed, is led by an experienced maître d’hôtel and features thoughtful wine pairings, despite a somewhat confusing by-the-glass selection. While the overall experience is cohesive, the structure of the menu—between set menus and surprise offerings—still lacks clarity and may make it difficult to understand the restaurant’s offerings.
