Long before anyone else, long before it became fashionable, he was a pioneer in protecting the local terroir and embracing a sustainable approach with his producers. Sylvain Guillemot has never wavered and reaps the rewards of his commitment every day. In this charming restaurant on the banks of the Vilaine, he helps breathe life into his region with cuisine that is consistently thoughtful, refined, and never masks flavors with gimmicks: celtuce and cockles, a delicate spider crab tart with coral foam, monkfish and grilled zucchini, or lamb—all part of a €105 tasting menu that truly puts local producers and fishermen in the spotlight. We finish with lemon tart and sea fennel sorbet, while Isabelle Jumel, who oversees an exceptional menu, offers excellent recommendations for every budget.
