Remarkable Restaurant
In just a few seasons, thanks to chef John Argaud, this famous restaurant nestled in the heart of the Basque countryside has once again become the gastronomic beacon it was in its early days. This high-end hotel is, therefore, naturally a destination for connoisseurs, and its very chic cuisine—featuring decidedly luxurious ingredients—has thus regained all its prestige: line-caught bluefin tuna with salicornia, charcoal-grilled langoustines with rhubarb, lemon balm, velouté, and a creamy shellfish sauce, crispy veal sweetbreads à la Grenobloise with a maritime twist, veal jus with licorice and vanilla form the backbone of a beautifully detailed menu featuring tempting dishes, right through to desserts such as mirabelle plum, verbena, and almond sorbet, or rhubarb and pelargonium. The atmosphere in this chic, naturally relaxing setting exudes serenity and the good life; the wine cellar boasts a rich selection of Irouléguy wines, as well as wines from throughout the Southwest, not to mention a few great châteaux and a serious selection from other regions.
