His restaurant offers a true gastronomic experience, where the wine and the food complement each other perfectly. Admittedly, the menus start at 95 €, but the dishes live up to their promise: a starter of bouchot mussels, green beans, apricot, and Burgundy saffron; pike with zucchini, verbena, and polenta; a Pornic pigeon with turnip, Burlat cherries, black garlic, and wild voatsiperifery pepper; and a dessert of rhubarb, wild strawberries, and green cardamom.
