Historically known as the “antique dealers’ street,” Rue Notre-Dame is now well known for its vibrant atmosphere. And it’s here that Théo Bouchère and Victor Salvan naturally chose to set up shop. A cozy bistro adorned with vintage finds, a nod to the antique dealers who once occupied the neighboring shops. Finalists in the Nouvelle-Aquitaine “œuf mayonnaise” contest, this signature dish takes on a different color each week, served alongside herring with potatoes in oil or a hearty sausage with mashed potatoes. Juices and broths are made in-house by Chef Théo, who runs the kitchen. Every day, the menu draws inspiration from seasonal delicacies sourced from local producers: beef from Parempuyre, fish from the Royan fish market, fruits and vegetables from the Chartrons garden… ultra-local ingredients are Bistro 111’s hallmark.
