Political life simply couldn’t do without this establishment, which has been revitalizing journalists and cabinet members for ages. A special place with no reason to change a menu that’s consistently a hit: smoked herring with steamed potatoes, black pudding terrine, Basque-style tripe, calf’s head with gribiche sauce, cassoulet, stuffed cabbage… Hearty fare, then, complemented by milk-fed veal chops or pepper-crusted ribeye to share. Finish with profiteroles or flan, washing it all down with a glass of Cahors from Mas del Périé.
