Célie and Aymeric have enjoyed a steady and encouraging rise, earning their restaurant two toques and a well-established reputation. At lunch, their affordable “bistronomy” already shows great promise, featuring a salad of lentils and crisp peas, smoked and dried fish from the Saône with a spicy cashew sauce, steamed Mediterranean mullet, sautéed new potatoes, roasted sucrine lettuce, colorful Swiss chard, and salicornia; a duck breast from the Southwest, mushroom cream, green beans and turnips, with a sliced garnish dressed in olive oil; and cherry clafoutis.
