The €39 set menu features pork pâté en croûte with poultry, mustard, and tarragon; a thick slice of aged catfish with white asparagus, asparagus and fennel broth; veal wrapped in Swiss chard leaves with carrot ketchup and spring vegetables; and a chocolate mousse with salted butter caramel and cocoa tuiles.
