A new chef has arrived at the helm of the Lassey restaurant, and the beginnings are promising, with a fine, elegant use of local resources and a fine classical mastery: confit trout from Crisenon, lemon caviar sorrel and trout roe, saddle of Burgundy rabbit with Fallot mustard, confit leg declination on carrot, rhubarb chartreuse and lemon balm sorbet. Alexandre Ziane's menu is a fine example of ambition, with high prices and the right choice on a four-course menu at €105.
