Opposite the historic Valentré Bridge in Cahors, Julien Poisot opened "Chez Suzanne" in 2024 as a tribute to his grandmother, with the help of his partner Justine Basin. With an à la carte menu of 3, 4 or 5 courses, the touch of a true chef is quickly revealed: mastery of taste and cooking, generosity with each service. The celery root stew, worked like a risotto and accompanied by asparagus, is the first proof. The fricassee of chanterelle mushrooms and poached egg is easy to eat with a spoon. The lamb, its offal and seasonal vegetables, bound together by a full-bodied jus, turn out to be far less simple than it seems. The dessert of strawberries and almond cookie, which counterbalances the acidity of the fruit, confirms the chef's technical mastery. A fine wine list featuring local references, not forgetting the rest of France.
