Le Bon Coin (choko ona in Basque) is the perfect choice for experiencing the region’s new vibrancy. In the heart of the chili capital, Flora and Clément’s restaurant has made a name for itself over the years. Not only a chef but also a leader, Clément Guillemot approaches and lives his cuisine with passion, crafting dishes that are both flavorful and visually stunning, seeking finesse and elegance in everything from the decor and tableware—including the ceramics and serving attire—to create a world of charm and good taste. The current offerings are showcased in the exquisite €96 menu, featuring sumptuous appetizers: tomato with black garlic and tagete, saffron mouclade with potato purée, veal sweetbreads with chili leaves, shiso, and black lemon, and fatty duck with glazed eggplant, basil, and confit garlic, followed by the famous “choko-gnac” in its annual version and the plum and fig leaf clafoutis. An impressive selection of regional and national wines, with an atmosphere that is both warm and refined.
