Meet the new kids on the block, Salomé and Nino, who have opened this charming address in the Faramand district. The couple met at high school in Poligny, before gaining experience in the kitchen all over France. Returning to the Jura was a logical next step, and this yellow-fronted house suits their ambitions perfectly. It's a pretty market cuisine, close to its producers and the seasons, available in two menus at €35 and €55. You can try Élise's white asparagus, homemade ricotta, rapeseed and chive flower, Vincent Perrin's pig, Basque corn, turnips and rose hips, and Salomé's rhubarb and almond dessert, ewe sorbet and Buddha's hand. Regional cellar and à la carte menu at the counter for aperitifs (kidneys of goat, oysters and kombu, agnolotti, char alis and peas, bone juice...).
