A new chapter has begun at Le Clarance with Gaëtan Citerne, who previously worked at Meurin and Le Cerisier, with a focus on cuisine that is both streamlined and accessible—just as we suggested last year. Accessible, because the concise menu focuses above all on high-quality ingredients, prepared with care and without frills or unnecessary embellishments: cuttlefish with einkorn wheat and miso butter, blue lobster with beets and blackcurrant infusion, rack of lamb with tomato tatin, sweet pepper harissa, and Melba-style peaches. It’s slowly approaching the level of fine hotel dining, but in a solid and professional manner that deserves to retain its culinary accolades, with service—though still a touch overly formal—that matches the establishment’s high standards.
