The €39.50 menu is very well calibrated, with well executed seasonal cuisine, burrata salad, heirloom tomatoes, peaches, roasted pistachios, balsamic reduction and basil oil, roasted trout pavé, chakchouka of peppers, olives, heirloom tomatoes and trout roe, a pork steak, tarragon purée, candied echalion and reduced jus, or a red fruit pavlova, mascarpone cream, strawberries and blueberries, caramelized almonds.
