In the recent past, this Colombier has been fortunate to have had only excellent chefs at the helm of its hotel dining experience. Yohann Thyriot, who has been with the restaurant for several years, is indeed the right person to carry on this journey and further solidify the restaurant’s reputation in this regard. Through his dedication to the restaurant, his clear and modern vision of local ingredients and the producers whose contributions are key to its success, he is steering the ship in the right direction. From his nearly 2,000-square-meter permaculture garden, he creates consistently intriguing dishes where seasonal produce takes center stage: lobster with green beans, melon, and caraway; tomato, tansy, and Kampot pepper; Archiane cristivomer with vegetable charcoal and blackcurrant; squab with plum, hazelnut, and spinach. The chef, passionate about peppers and spices, always finds the perfect seasoning to elevate every dish. Beautiful desserts in the same spirit (granny smith, celery, lovage, Batak berries…), a specialist’s Rhône wine cellar, with prestigious and locally sourced Hermitage wines naturally taking center stage.
