Highly visible thanks to Gault&Millau since he set up shop on the port five years ago, Guillaume Roget continues his quest for excellence, in the product as in its treatment, in his choices, from the cellar to the pantry. His menu of the moment respects the season, the arrivals are beautiful, the accompaniments and condiments well distributed and the technique is there: asparagus with lemon sapin and grilled sabayon, monkfish with basil, honey and verbena, turbot with morels, hazelnut and yellow wine, lamb from the Basque country with green aniseed and orange blossom pepper... A short menu deployed in two large tasting menus, but which you can fly over at lunch with an extract in three parts for 75 €, ending, for example, with the good dessert chocolate ewe honey soufflé. We appreciate the quality of the wine cellar, which is very eclectic in terms of quality, and the choice of accompaniments, which are always relevant.
