From Rodez to Conques, Émilie and Thomas continue to serve local cuisine in this peaceful haven, open from March through the end of December in a renovated 19th-century mill. Lunch is enjoyed by the river, which guests are happy to gaze upon as the meal unfolds at a leisurely pace. In this idyllic setting, the cuisine showcases impressive culinary skill centered on local and seasonal ingredients. The tomato served in its own juice brings a lovely freshness, particularly welcome in the summer. The meal continues with a vegetable-focused dish: a perfectly balanced aubergine served with basella leaves, lemon, and praline—a real success. The tuna, barely cooked to preserve all its freshness and tenderness, unfortunately gets lost on a plate where the harmony isn’t quite there between the cucumber, green beans, and the verjus-raspberry sauce. The dessert, featuring verbena and rhubarb, concludes on a deliciously indulgent note with a lovely burst of freshness. The meal is accompanied by a well-curated wine list with reasonable prices (unlike the bottle of water) given the quality of the dining experience, featuring both national selections and local gems for those wishing to explore this wine-growing region.
