Remarkable Restaurant
In this former carpentry workshop dating back to 1850—long abandoned and then revitalized in 2021 by the Nara design firm—the decor thoughtfully preserves the spirit of the place: a stripped-back wooden ceiling, spacious interiors, a central open kitchen, an almost Nordic restraint, and warmth without ostentation. Since our previous visits, the restaurant seems to have found its second wind. The welcome has grown warmer, the staff’s movements have shed their tension, and one senses a serenity in the team—that discreet peace which, in great restaurants, always ends up finding its way onto the plate. Margo Bisset, the restaurant’s director, embodies this perfect balance: a constant smile, an attentive eye, gentle authority, and a natural sense of equilibrium. As for the cuisine, it has come into its own since the restaurant’s head chef, Carole Eckert, took over the kitchen, with a clearer focus on plant-based ingredients, local producers, and the rhythm of the seasons. She knows how to combine the crispness of a vegetable with the richness of a cheese, such as this crunchy fennel paired with feta, offering a refreshing and vibrant flavor. The spring garden and its wild foraging—featuring strawberries, fried flowers, and a butter sauce infused with elderflower—come together in a bountiful, almost carefree plate that captures the spirit of long, plant-filled walks. Alsatian asparagus, caramelized with mustard seeds and served in a tartlet, becomes a small seasonal masterpiece where all the fundamental flavors find their perfect balance. The fish dishes confirm this precision: the pink trout from Sparsbach, gently confit in oil, is highlighted by woodruff, beets, hazelnuts, and the saltiness of trout roe. Meat dishes are by no means supporting acts: the lamb prepared three ways—fillet, filet mignon, and leg—served with black garlic, puffed lentils, and lentils in spring onion oil, is anchored by a robust and aromatic gravy. Strawberries, buckwheat, and white asparagus—served as a crystalline sorbet and a cold soup—form a unique dessert, sweetened by a buckwheat caramel. The meringue-topped timbale with candied rhubarb concludes on a delicate and precise note, almost herbaceous. The wine list tells the story of Alsace with remarkable conviction: the selection is solid, contemporary, and never narrow. Just two reservations: the bread, pleasant thanks to its sourdough, would benefit from being more distinctly salty, and the desserts, though very refined, sometimes seem less elaborately crafted than the savory dishes. But the overall experience remains remarkably consistent. Carole Eckert has achieved what few restaurants truly manage: a great restaurant, but above all a team—a collective strength, a joy in serving and cooking—that transforms every meal into a true celebration.
