A major institution on the French culinary scene, run by a family rather than some corporate group that came out of nowhere—that makes all the difference. This is La Pyramide in Vienne, a model of excellence that embodies both a long history and modernity, thanks in part to the way it has been passed down through the generations. Patrick Henriroux, together with his children, has achieved what so many restaurateurs and chefs dream of: ensuring the restaurant’s long-term future. In the bistro section, which he runs with his son Boris, regulars from the main dining room find a serene, familiar, and very welcoming space. They treat themselves to their favorite dishes at affordable prices: white asparagus with a fava bean and chicory salad, lean roast meat with green beans, or seven-hour-braised lamb with sumac-seasoned bulgur tabbouleh. Every dish bears the mark of a pro and just the right touch of good taste, and guests have access to La Pyramide’s magnificent wine cellar to take their bliss to the next level.
