It’s Frenchie—it’s one-of-a-kind and not easy to get into: on the bustling Rue du Nil, the restaurant is packed to the brim every night, as is its wine bar annex across the street, and Grégory Marchand has been at the helm of its success for nearly fifteen years. Every visit remains a pleasure, despite the crowds and the somewhat elitist, Parisian vibe, because the atmosphere is always cheerful and the cuisine is meticulously prepared by a chef who leaves nothing to chance. His menu features seven courses for €150, a selection that owes nothing to improvisation: perfectly curated seasonal ingredients, flawless technical expertise, and innovative ideas inspired by the market. And a connoisseur’s wine cellar, supporting new winemakers without neglecting the established ones, allowing guests, for example, to enjoy a Montcalmès by the glass or an extra-brut from Lassaigne from a catalog curated by a true connoisseur (Vernay, Combier, and Gangloff, for instance, from the Rhône).
