The former "Pot de lapin", which became "Gargamelle" in June 2025, retains its chic bistro spirit in an old mansion on the outskirts of Saumur. The menu is extensive, but you can also enjoy a nibble with oysters from Gillardeau, plain or au gratin with shallots or watercress on a Loire Crémant sabayon. Racan's guinea fowl ballottine is accompanied by a mushroom cake and a multitude of precisely cooked vegetables. It's impossible to miss the galipette, a large local mushroom stuffed with petits gris, and the desserts are well thought-out, like these creamy lemon and hazelnut puffs. The wine list is in keeping with the spirit of the place, featuring wines that respect the living world, with references from the Loire, Jura and Roussillon also well represented. A welcoming address where you can even enjoy the first spring sunshine around tables laid on the sidewalk, and which deserves a chef's hat.
