The chef presents a reimagined take on classic cuisine, with meticulously plated dishes. The €77 menu sets the standard, featuring savory appetizers, green asparagus with black garlic, Parmesan, and glazed mustard; a langoustine appetizer with peas, cherries, and elderflower; a fillet of brill with morels and vin jaune sauce; veal fillet with artichokes, pollen, and carrots; and a rhubarb tartlet with white ganache and shiso.
