This imposing house built of light-colored stone, perched on the hillside just before the road descends toward the city, is impossible to miss. The contemporary dining room offers simple comfort. The welcome is warm, and the service is cheerful and efficient. In the kitchen, Jérémy Cannesan draws his inspiration from the regional terroir through an ultra-short menu presented as “blind” tasting menus. He has now established himself as one of the area’s most reliable choices. A very spring-like starter features Noirmoutier pollock beautifully highlighted by split pea hummus, green asparagus, and pink radishes. The dish is enhanced with fermented Swiss chard stems, mustard seeds, and chive blossoms. Next, a rustic-style dish prepared with elegance: a superb farm-raised pork dish enhanced by a rich, well-balanced gravy. The accompaniments were exceptionally well-executed, featuring brunoise of confit turnips, plain carrots, a parsley crumble, and potato purée with fermented garlic cream and chives. And to finish, a trilogy featuring a lovely strawberry soup accompanied by a creamy lemon sauce and a red wine sorbet with herbaceous notes, as well as an almond crisp served with rhubarb compote and heavy cream. As for the wine cellar, there are several dozen top-tier selections. All of this certainly deserves two toques.
