In a city where tradition is the norm at the table, Emmanuel Chamouton's restaurant brings a breath of fresh air, with its seasonal, contemporary cuisine focused on the essentials. His €29 menu is a pleasant market plate, where the chef executes his desires of the moment, without a predefined menu. We discover a kale and pointed cabbage salad, around beet with pita bread, which could do with a little more research, followed by an impeccably cooked, melt-in-the-mouth, pinkish quasi-veal, with creamy polenta and seasonal vegetables. Finally, fresh strawberries, cherry pickles, hibiscus flower and white chocolate ganache, as beautiful to look at as they are to eat. Smiling, pleasant service.
