Thanks to its consistency, its boldness—always measured and controlled—and its precision, Keigo Kimura’s cuisine remains one of the most appealing on the scene, especially given the reasonable prices. A market-inspired menu for €48 and a tasting menu for €100 allow diners to enjoy a wide range of original dishes, particularly those featuring vegetable combinations (artichoke with olives and green sauce, chorizo rice with grapes and yuzu) or seafood (monkfish with broccoli and miso butter, smoked eel with green asparagus pie). Smoked and fermented flavors, as well as regional traditions (guinea fowl served in two courses with gribiche sauce), hold no secrets for this skilled and imaginative chef.
