His specialty: the gravies and sauces that accompany each dish, served in a small pot left on the table, which diners delight in finishing—such as this tangy rhubarb vinaigrette served with raw and grilled green asparagus atop pan-seared foie gras. The poached whiting on a bed of glasswort, served with smoked Noirmoutier potatoes, strikes the perfect balance with a marinière-style sauce infused with yuzu, cockles, and seaweed. The desserts are equally impressive, featuring glazed local strawberries and rhubarb confit, a verbena cream, a fromage blanc sorbet, and, as always, a carefully balanced strawberry-ginger juice.
