One of Emilien Rouable's greatest successes is undoubtedly his ability to build on Solange's legacy while modernizing this old village butcher's shop, whose former cold room serves as a storage area, and whose butcher's fangs are still visible on some of the walls. But the greatest success of this local boy (he was born in Villecresnes), who trained in some of the finest Parisian establishments, lies above all in the impetus he gives to dishes based on fine produce, in his perfect mastery of sauces, both gourmet and punchy, and in his intelligent use of vegetables. The service is just as successful, both relaxed and at the right distance, and the cellar is that of a passionate connoisseur. The only false note is that customers are obliged to endure the diktat of a hidden menu, which fortunately does not spoil the excellent time spent within the walls of this delightful house. In the basement, a table d'hôtes is set up in the middle of the wine cellar.
