In the heart of the medieval city of Carcassonne, the Hôtel de la Cité is home to a restaurant with a classic setting steeped in history, far removed from passing trends. At the helm for many years, Jérôme Ryon remains firmly rooted in the traditions of the Aude region, yet his cuisine is punctuated with subtle details that reveal his personality and expertise. The “Aude Mosaic” menu offered for lunch at €79 is a fine example of this. The red mullet, served with a pearly sheen, is accompanied by cuttlefish tagliatelle and fish soup, presented on a plate with precision and technical mastery. More distinctive is the Cathar-style lamb with Castelnaudary beans, which offers a rich intensity balanced by a well-measured blend of herbs and spices. The entire meal reflects solid and consistent culinary skill. The €55 lunch menu also offers an excellent introduction to the restaurant. The service, professional and attentive, lives up to the venue’s high standards.
