In the heart of France, in one of its most beautiful villages, Touraine chef Dominique Dubray runs this establishment with a fine sense of rigor, offering comfortable rooms and a cuisine based on produce that recalls regional gourmet delights. Traditions are reproduced with generosity, yet at pleasing prices: creamy Puy-en-Velay lentils, warm duck foie gras, Alagnon beer vinegar, snacked sea bass fillet, spring greens, wakame seaweed and lemon butter, pork cooked three ways and creamy mushroom risotto, grandma's French toast with caramelized pears.
