Chef's Restaurant
With Joël Césari’s recent retirement, it is Laurent Barberot—who trained under Bernard Loiseau and Laurent Petit, among others, before serving as sous-chef to Jacques Chibois at La Bastide Saint-Antoine—who has proudly taken the reins of La Chaumière, a restaurant well known to the people of Franche-Comté. Barberot has made the decision—both strategic and undoubtedly dictated by his status as an independent operator—to introduce changes only gradually, tweaking the menu sparingly, renovating the premises in phases, and planning to elevate the hotel’s standards. On the plate, the changes are once again subtle (Laurent Barberot has chosen to maintain the concept of a more bistro-style menu during the week and a more ambitious one on weekends), but the first two chef’s hats are well deserved, for the marinated sea bream carpaccio, peach, verbena, and citrus vinaigrette; the veal kidney fricassee with chanterelles and mushrooms; and the honey-roasted apricot with apricot marmalade and raspberry sorbet. The wine cellar is also gradually being revamped, and the service continues to be charmingly attentive.
