Cristina and Cédric recently took over this traditional crêperie in Beuvron-en-Auge, a beautiful half-timbered village in the heart of the Normandy bocage. Food lovers and gourmets alike come here to savor crêpes and galettes made with fresh, local ingredients, all sourced from the Auge Valley: cheeses from a neighboring farm, charcuterie from the Trappist monks, meats from Norman breeds, fruits, vegetables, ciders, Calvados, and Pommeau. Welcomed by Cédric’s cheerful disposition, savor the best of this rich region, elevated by Cristina’s talent: buckwheat galettes made with high-quality buckwheat flour and generously topped, ranging from the most classic to the most distinctly Norman, such as the “Rencontre des Normandie(s)” with Camembert, crème fraîche, and smoked ham; the “P’têt bin qu’Oui” (black pudding, applesauce, Camembert sauce); or the “P’têt bin qu’Non” (andouille wrapped in bacon, Pont-l’Évêque, crème fraîche, and old-fashioned mustard). As for sweet crêpes, don’t miss the Tatin with apples poached in Pommeau and artisanal salted butter caramel ice cream. But that’s not all: La Colomb’Auge now also offers “made in Normandy” daily specials to add variety and enhance your dining experience.
