You almost need a rally driver’s license to get to the Maison de la Pia, but once you’re there, the sheer beauty of nature makes you forget everything. In the middle of nowhere, after driving along country roads and dirt paths, crossing a river, and perhaps even passing a border, the scenery takes hold—a living silence, disturbed only by the wind, the spring water, and the life that flows through it. Camille Burle and Thomas Guernion have turned their home into both a retreat and a restaurant. Here, there’s no dining room in the traditional sense; you dine in their living room, starting out on the terrace with a glass of natural sparkling wine in hand, lulled by the river. Then time stretches out without ever feeling tedious. There’s no menu either, neither for the dishes nor for the wines. The chef creates his dishes day by day, guided by the seasonal bounty of the surrounding valleys and his own inspiration. It’s refined, precise mountain cuisine, where every plate tells a simple story: that of the perfect flavor. Cream of squash soup with Vence saffron, an organic soft-boiled egg, and wild asparagus in tempura. Stew of split peas, fava beans, green peas, and confit Brigasque lamb. Rhubarb crumble with plum-lavender ice cream. Dishes that appear simple yet possess a rare depth, where everything is precise, floral, and served at the perfect temperature. Nothing falters. In the dining room, Camille orchestrates everything gracefully on her own. With a constant smile and confident poise, she presents each plate with precision. Her wine cellar, boasting some 100 natural wines, becomes a living menu. We’re given descriptions, we taste, we choose. The service flows seamlessly, with no waiting, over nearly three hours that slip by before we even realize it. The venue itself is part of the experience—exposed stone, tables from another era, monogrammed silverware, objects steeped in history… Right down to the sourdough mountain bread, baked over a wood fire by Lucien, a local baker, and the cheeses from the farms of Breil or Tende. La Maison de la Pia is not just a restaurant. It’s a respite. An experience that blends travel, untamed nature, sincere hospitality, and socially conscious cuisine. A place where people come to eat, but above all to reconnect.
