Remarkable Restaurant
Business is business, and the Croisette remains the Croisette—a place of chic, prestige, and glamour for a century. And the Martinez continues to be this jewel of the Riviera with its Palme d’Or, a sublime room on the upper floor overlooking the bay. The waves may come and go, but the charm remains intact, and all it takes is a few sparks to feel that same thrill as always—ever since the greatest chefs have taken the helm of this Art Deco “ocean liner” where everything is under control. The culinary journey unfolds with the changing seasons, featuring fine catches and prestigious ingredients: steamed John Dory, Swiss chard fondue, chanterelle mushrooms with shrimp and lemongrass broth, chargrilled lobster flambéed with cognac, barbajuans, smoked tomatoes and glasswort in a sealed casserole, veal sweetbreads and gnocchi with candied lemon, green vegetables, and black citrus fruits. The dining room is surrounded by a service team fully committed to their roles; everyone is in their place, right down to the pastry chef crafting the vanilla tart with rice pudding and Piedmont hazelnuts. The wine cellar covers most needs and is well-stocked with regional selections.
