We first discovered them in Saint-Pol-de-Léon, where they were already running a family-run restaurant before taking over Antoine Souillat’s former restaurant in 2023. After a few seasons of fine-tuning, Sébastien Méhaux seems to have found the right balance in his cuisine—which is highly personal, inventive, and sometimes daring, but whose evident mastery has earned him two prestigious toques: a beautiful pairing of carrots, cockles, and white miso with yuzu; superb langoustines from Guilvinec (Brittany is never far away) paired with rhubarb and ume kosho (Japan is a regular guest on the plates of this former student of Pierre Orsi) followed by pollock cleverly enhanced with asparagus, peas, and sea urchin. Lovely desserts, created by Delphine, his wife, and Tennessee, their daughter (a real success with mango, smoked paprika, vanilla, and almond), and a fine wine selection presented by Hugo Prats, Tennessee’s partner.
