The entire Mâconnais region on a single table—that’s the promise of Sébastien Grospellier and his wife Floriane! Their restaurant in Chaintré is an ode to southern Burgundy, a superb stone house with tasteful, classic decor in red and white. The €85 tasting menu is the chef’s playground, where he reinvents his cuisine with experience and flair. This time, the slightly warm asparagus and the Breton sardine with lime, cumin mousseline, tangy cream with Osciètre caviar from Kaviari, a blue lobster marinated in dill, cut into “barbajuan”-style pieces, with raw and cooked fennel, olive oil infused with Burgundy saffron and grilled lardons of smoked duck breast, or even a Bresse chicken, with roasted thigh and skin-on fillet, turnip pulp, steamed snow peas, and a creamy sauce with vin jaune and curry spices. An excellent wine cellar with nearly 450 selections.
