Gault&Millau's review 2026

Chef's Restaurant
It’s a rather unassuming spot—a house tucked away below the main road, offering a breathtaking view of La Ciotat Bay and Île Verte. A rather refined and chic establishment, the atmosphere is gentle, the lighting is subdued, and the decor plays it safe, featuring warm colors, light wood slats, rough-hewn stone, and elegant table settings—perfect for business lunches and family gatherings. Nans Gaillard, who trained at top restaurants such as La Chèvre d’Or and Lasserre, creates exquisite Mediterranean cuisine, rich in culinary references and technically flawless. The €105 menu lives up to its promise, featuring a lovely starter of red seabream prepared like gravlax—tender, succulent pieces topped with Baeri caviar— dill-and-cucumber whipped cream—perhaps a bit too ordinary—a very successful “trilogy of the sea” featuring pollock, John Dory, and grey sea bream, served on a rich bed of fish soup with a lovely reduction, saffron potatoes, scallions, and beets, followed by a sumptuous macaroni gratin with foie gras and celery, slices of black truffles, and meat jus—reminiscent of Éric Fréchon’s signature dish—and finally, a refreshing pear and chestnut dessert. A small but well-curated wine list, with excellent recommendations by the glass (Jonathan Pabiot, Domaine du Colombier, François Villard, Alain Voge, Domaine Leflaive…). Very pleasant service.
