Chef's Restaurant
Still located within the Renaissance Hotel, at the entrance to Aix-en-Provence, Pierre Reboul continues his culinary journey with a contemporary, playful, and highly technical take on Mediterranean cuisine. The dining room has clearly matured since our last visit: more elegant and comfortable, it now offers a setting more in line with the restaurant’s ambitions, particularly thanks to the counter that opens onto the kitchen. The chef retains his penchant for trompe-l’œil effects, textures, and unexpected pairings, always driven by a desire to surprise. The famous foie gras flambé remains one of the restaurant’s signature touches, while a Ventabren tomato provides a refreshing start to the meal. The langoustine, served in several courses, particularly impresses with its perfectly executed cooking and a deep, expressive sauce. More classic in its approach, the veal en croûte with coffee and licorice also reflects the chef’s commitment to bold and sometimes unexpected flavors. Some dishes, however—which are at times rather sparse—would benefit from being served in more generous portions, particularly when it comes to the accompaniments. This is a restaurant that remains uniquely its own, firmly rooted in Pierre Reboul’s culinary world, where creativity, technical mastery, and a playful spirit continue to shape an instantly recognizable identity.
