A legendary restaurant needs a leader as reliable and knowledgeable as Jean-Louis Nomicos, who divides his time between here and his home on Avenue Bugeaud. In both cases, the guarantee of a job well done goes hand in hand with impeccable taste. In this legendary dining room, whose roof opens up to the stars in the Parisian sky, the classics are always spot-on, from the master’s own famous macaroni with foie gras and truffles to the André Malraux pigeon—René Lasserre’s signature dish—not to mention the Rossini-style fillet and the lobster, served in a much more contemporary style, steamed with verbena, caramelized tomatoes, and lobster sauce.
