The chef imagines and interprets the classics: breaded soft-boiled egg and leek fondue with Melanosporum truffle from Istres, sole meunière, Burgundy poultry medallion and fine stuffing with hazelnut and morel mushrooms, creamy blanquette jus, or crêpes Suzette.
