Flavors from around the world provide the inspiration for an original concept initiated by Nicolas, who is accompanied in the dining room by Justine. A colorful, street-art chic setting in Bayonne's Saint-Esprit district on the banks of the river, this is where the Chef imagines recipes with the scent of travel. Although he studied hotel management, he is self-taught in the kitchen, but innovates and invents like no one else. In fact, he says he has the time of his life looking for alliances and mixing spices, always including a south-western ingredient in each dish: Banka trout with miso, Pyrenean lamb confit with tajine-style vegetables, arancini with txistorra sausage, a burger with homemade cheddar and local pork belly... The combinations are infinitely varied, thanks to the use of local meats and fish, and fruit and vegetables from a MOF market gardener. The menu is renewed according to seasonal offerings and the Chef's mood. A daily special is offered every weekday lunchtime, why not enjoy it on the terrace overlooking the Adour river.
