In the heart of the episcopal palace of Saint-Lizier, Brazilian-born chef Pamela Simões and her husband, sommelier Gianni Polito, welcome us to this magnificent setting overlooking the Pyrenees, which truly comes into its own on the terrace in the summer. The couple took over this restaurant in early 2025 and continues to focus on cuisine featuring seasonal and local ingredients. Tonight, three menus with evocative names are on offer at prices that are quickly rising: the “Fidèles” menu at €40, the “Cardinal” menu at €59, and the “Popes” grand menu at €95. Some dishes still lack balance, such as the pan-seared foie gras, whose accompaniments—including apricot, fig sorbet, and apricot coulis—result in an overly pronounced sweetness. But there’s no shortage of good ideas: the stuffed eggplant, the zucchini blossoms stuffed with stracciatella served with Arctic char, and the Plantaurel duck breast all reveal a technique that’s already quite impressive. The front-of-house team could still improve its precision to better match the kitchen’s stated ambitions. The experience is complemented by an excellent wine list highlighting French vineyards, with a strong focus on wines from Bordeaux and the southwest.
